How Decaf Coffee Is Made

Decaf coffee beans are produced by removing caffeine from green coffee beans before roasting. Caffeine is a water-soluble compound, which allows it to be extracted using water, solvents or filtration methods while aiming to preserve the coffee’s flavour compounds.

Swiss Water Process

The Swiss Water process is a water-based, chemical-free method that relies on solubility and osmosis. Green coffee beans are soaked in hot water to dissolve caffeine and flavour compounds, creating what is known as “green coffee extract” (GCE).


The extract is passed through activated carbon filters, which remove caffeine molecules while leaving the flavour compounds behind. New batches of beans are then placed in this caffeine-free extract, allowing caffeine to diffuse out of the beans while minimising the loss of flavour.


This method also removes around 97%–99% of caffeine, producing a clean, balanced coffee with good flavour retention.


Mountain Water Process

The Mountain Water process is a chemical-free decaffeination method carried out in Colombia. Green coffee beans are first steamed to open their cellular structure, making the caffeine more accessible. They are then washed with water, which extracts caffeine along with some soluble compounds.


The caffeine is removed from the water using carbon filters, and the flavour-rich water is reintroduced to the beans so they can reabsorb their original soluble compounds. This helps maintain the coffee’s natural flavour, body and aroma.

This process typically removes around 97%–99% of caffeine, resulting in a smooth, clean and well-balanced decaf coffee.


Sugarcane Process

The sugarcane decaffeination process uses ethyl acetate (EA), a naturally occurring compound derived from sugarcane. Green coffee beans are first steamed to expand their structure, then washed with the EA solution.

Ethyl acetate selectively binds to caffeine molecules, allowing them to be extracted from the beans. The beans are then rinsed with water and dried, leaving behind most of the coffee’s natural flavour compounds.

This method removes around 97%–99% of caffeine and is known for preserving sweetness, body and aroma, often resulting in a smooth, well-rounded cup.
