Brewing: 

1. Start by grinding the coffee beans of your choice to a medium-fine grind and place the filter into the brewer. 

2. Close the filter holder outlets. This allows the coffee bed to be optimally dampened and ready for the extraction process. Pour a small amount of water over the freshly ground coffee, just enough to dampen the entire portion. Now the blooming begins. Gases caused by roasting escape, which you can see in the generation of bubbles on the surface of the coffee. This improves the coffee extraction, and the essence of the taste can be perfectly developed. The result is a full aroma. 

3. Turn the knob to open the filter holder outlets once the blooming process is complete. Pour the water slowly and evenly over the ground coffee in a circular motion. At a rate that keeps the water level in the filter just above the coffee bed at all times. As a general rule, the pouring speed equals the draining speed. The ideal flow is provided by the filter ribs and the two outlets. The result is an even extraction.
