Colombia Cabresto Coffee: A New Organic Colombian Coffee from Antioquia

Colombia Cabresto Coffee: A New Organic Colombian Coffee from Antioquia

Petra Jones |

While we were cupping samples for new coffees to add to our range, Colombia Cabresto stood out straight away. There was something quietly distinctive about it,  smooth, balanced, and naturally sweet, without trying too hard to impress. It’s a new arrival for us, but one that immediately felt confident, well put together, and easy to enjoy. It’s the kind of coffee that works just as well first thing in the morning as it does later in the day.

From the Mountains of Antioquia

Antioquia is one of Colombia’s most respected coffee-growing regions, known for its high-altitude farms, fertile volcanic soil, and long coffee-growing tradition. Colombia Cabresto is grown at elevations between 1,500 and 2,000 metres above sea level, where cooler temperatures allow coffee cherries to ripen slowly.

This slower maturation plays a big role in the final cup, helping develop sweetness, clarity, and balance without sharpness. The result is a coffee that feels smooth and rounded rather than intense or overpowering.

Cabresto is produced by Lozana Organics Coffee, working on a direct trade basis with smallholder farmers. This direct relationship supports organic farming, long-term sustainability, and full traceability. Each lot can be traced back to its origin, supporting farming families while offering transparency from farm to roastery.

Organically Grown, Fully Traceable

Cabresto is certified organic, meaning it’s grown without synthetic pesticides or chemicals. Instead, farmers focus on soil health, biodiversity, and long-term sustainability — practices that protect both the environment and the future of coffee farming in the region.

Organic farming isn’t just about what’s left out; it’s about preserving what matters. In Cabresto’s case, that means letting the natural character of the coffee shine through in the cup.

Through a direct trade model, full traceability ensures that every batch can be followed from farm to roastery, giving confidence in both quality and ethics.

What Does Colombia Cabresto Taste Like?

Colombia Cabresto is all about smoothness, sweetness, and balance. It’s available in two roast styles, each highlighting a different side of the same high-quality coffee.

Colombia Cabresto Dark Roast

The dark roast brings out a fuller, richer profile while keeping the coffee smooth and well balanced. Expect creamy notes of milk chocolate and caramel, with hints of panela. Acidity is lower, allowing the sweetness and body to take centre stage.

It’s bold without bitterness and ideal for those who prefer a comforting, full-bodied cup.

Colombia Cabresto Medium-Dark Roast

The medium-dark roast is soft and refined, with flavours of milk chocolate, panela sugar, and light caramel, supported by gentle citrus brightness. The body is creamy and rounded, making it easy to enjoy across a range of brewing methods.

It’s a great choice if you like a coffee with depth and character, but without anything feeling overpowering.

Brewing Suggestion for Colombia Cabresto

Colombia Cabresto works well across a range of brewing methods, but these two recipes are designed to bring out the best in each roast.

Espresso Brewing Guide – Dark Roast

This recipe highlights the dark roast’s chocolate sweetness, caramel depth, and smooth, full-bodied texture.

Dose: 18 g coffee
Yield: 36 g espresso (1:2 ratio)
Grind: Fine (espresso)
Brew Time: 25–28 seconds
Water Temperature: 92–93°C
Pressure: 9 bar

Tasting result:
A smooth, rounded espresso with creamy chocolate and caramel notes, low acidity, and a long, satisfying finish. Excellent as a base for milk drinks such as flat whites and lattes.

Barista tip:
If the shot feels heavy, shorten the yield slightly to around 34 g. If it tastes too intense, extend to 38 g for a more open, balanced cup.

Filter Brewing Guide (Pour Over) – Medium-Dark Roast

This pour-over recipe brings out balance, sweetness, and gentle citrus clarity.

Dose: 20 g coffee
Water: 300 g (1:15 ratio)
Grind: Medium-fine (similar to table salt)
Water Temperature: 94–95°C

Pour method:

  • Bloom: 40 g water for 30 seconds, gently swirling to fully saturate the grounds

  • Main pour: Slowly pour up to 180 g by 1:15 using steady circular pours

  • Final pour: Pour up to 300 g by 2:00

Total brew time: 2:45 – 3:15

Tasting result:
A clean, well-rounded cup with chocolate and panela sweetness, light caramel notes, and a soft citrus lift.

Barista tip:
If the cup tastes flat, grind slightly finer. If the citrus feels sharp, grind a little coarser or reduce the brew temperature by 1°C.

Why Colombia Cabresto Works So Well

As a new coffee to our range, Colombia Cabresto isn’t about chasing extremes. It doesn’t rely on sharp acidity or unusual flavours to stand out. Instead, it delivers what many people look for in an everyday coffee: balance, consistency, and natural sweetness.

It’s a coffee that reflects the care taken by the farmers who grow it, supported through direct trade, and the conditions that make Colombian coffee so widely loved. Organic, fully traceable, and easy to enjoy — Cabresto is a coffee you can come back to again and again.

If you’re looking for an organic Colombian coffee that works across espresso, filter, and milk-based drinks, Colombia Cabresto is a great place to start.
