Old Brown Java comes from the Indonesian island of Java, where it is traditionally aged to bring out its unique flavour profile. The beans are exposed to the humid monsoon winds, which reduce their acidity and develop deep, earthy notes. This process, known as "monsooning," gives the coffee its characteristic old brown colour and rich, bold flavours.
