Brewing:

3. Turn the knob to open the filter holder outlets once the blooming process is complete. Pour the water slowly and evenly over the ground coffee in a circular motion. At a rate that keeps the water level in the filter just above the coffee bed at all times. As a general rule, the pouring speed equals the draining speed. The ideal flow is provided by the filter ribs and the two outlets. The result is an even extraction.
