The El Pensativo cooperative, from which we source our Antigua coffee, is located near the volcanoes of Acatenango and Fuego. Known collectively as La Horqueta, the volcanoes are always active but to a low level. The volcanic activity of the region creates an abundance of micronutrients in the air and soil and makes the coffee both delicious and relatively easy to grow.

El Pensativo was established in 1972 and has grown in production quantity and quality almost every year since then. With the help of another cooperative, they have been financed to upgrade the production equipment of local producers and provide experts to improve yield and final cup quality.

The collection ‘Antigua’ is made up of several local microlots which are very small scale and family run. The coffee cherries are dried on the roofs of the houses on the steep mountain side. Once it has undergone a drying process it is shipped to the cooperative for cupping and exporting.

The final coffee we receive is perfectly balanced with sweet caramel and exotic fruit. It finishes with a subtle citrus like acidity and a hint of hazelnut. The aroma of the coffee is sweet and the body smooth. It makes for a really pleasant drink however it is brewed. Our most recently lot was cupped at 83.

Panama Finca Hortigal is sourced from the highlands of Boquete, located in the south-west mountains of Panama with views of the Volcan Baru and Hortigal Mountain. The area is world famous for producing some of the best coffee that money can buy due to the nutrient rich volcanic soil and unique micro climates. It’s clear why we are extremely excited about this coffee here at Redber.

Finca Hortigal is home to 34.5 hectares and following each harvest the cherries are sent to a local mill to be processed. At the mill the cherries are washed and sun-dried to allow the flavours to develop. Following the drying process, the coffee is stored in a warehouse and regularly cupped until the perfect characteristics are apparent and the coffee is ready to be shipped.

      This roast allows the true origin flavours to shine through. Sharp with cranberry and sweet with pear, finishing with a bright juiciness and hint of sugarcane. Enjoy this as a filter for best results. 

      Zombo coffee is from a collection of microlot farms all producing speciality coffee. It is processed at a central mill and washing station co-owned by the farmers. This central smallholding business model allows for consistency in the coffee, high cupping scores of 85+, increased farmer income - paying way over the Fairtrade price, and community development, allowing the farmers to be self sufficient in many ways. This wonderful scheme has transformed the lives of the farmers and their families.

      The coffee is completely organic and nothing artificial is used in the growth or production, better for the environment and the cup. It's a speciality coffee, allowing the farmers to receive a great price for their product and allowing us, the consumers, to enjoy a brilliant cup.
