This month, our Coffee of the Month is Colombia Finca Sofia, sourced from small-scale producers in the renowned coffee town of Belén de Umbría.
Finca Sofia offers a buttery mouthfeel, sweet acidity, and flavours of banoffee with a smooth, clean finish. The farmers in this region predominantly grow the Castillo coffee variety on their 4 to 6-hectare farms and carry out the wet-processing of their cherries on-site.
Sofia is a versatile coffee that shines in various brewing methods, but we especially enjoy it in a Hario V60 or Chemex.
