This Ipanema Fazenda Rio Verde Catuai is prepared from 100% Yellow Catuai cherries harvested from the Fazenda Rio Verde and processed using the pulped natural method.
Yellow Catuaí: Yellow Catuaí is a dwarf hybrid of Mundo Novo and Caturra, which was crossbred in Brazil in 1949. Together with Red Catuai, it is a highly resistant cultivar suitable for growing in high altitudes and windy areas. Both Catuais have very refined and clean acidity.

I love this coffee. There is no bitterness at all.
Poor, bitter not to my taste
Having bought the dark roast version of this coffee, followed quickly by the medium roast, I think the latter suits the beans better. My preference is usually for darker roasts, but the subtleties of this bean seem better suited to more medium roast. I’d be most interested to try something in-between!
